Savory and Satisfying Chicken Tortilla Soup

Everyone loves chicken and tortilla soup. This recipe is certainly one of the best I’ve found on the internet and I wanted to share it with all of my foodie friends! Fresh baked chicken, shredded and spiced, reduced with Rotel tomato sauce. Add in some tortilla strips, onion, peppers, and beans. Sounds amazing doesn’t it? Well once you add in the cilantro, avocado, salsa, and cheese garnish, it certainly will rock your tastebuds.

Delicious chicken tortilla soup recipe
Instructions
  1. Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic, and salt. Coat chicken with olive oil and add spice to the chicken.
  2. Bake chicken on baking sheet and bake for 20-25 minutes. Shred chicken after baking.
  3. Heat a pot over medium heat to high heat. Add olive oil, peppers, and garlic. Stir and cook, then add spices followed by the shredded chicken.
  4. Pour in Rotel, tomato paste, water, black beans, and chicken stock. After bringing to a boil, reduce to low heat and let simmer for 45 minutes to an hour uncovered.
  5. Mix cornmeal with water and pour into the soup. Occasionally stir while letting simmer for 30 additional minutes. Taste and add seasoning if desired. Turn off heat and let sit for 15 minutes. Stir in tortilla strips.
  6. Serve and top with desired garnishes.
