Chive Butter
  1. In a bowl, stir butter, chives, shallot, garlic, salt and pepper together. Cover and place in refrigerator until meal is ready to be served.
Potatoes
  1. Bring pot of water to a boil and add potatoes. Boil until cooked. When cool to the touch, cut into quarters.
  2. In a bowl, mix red wine vinegar, olive oil, salt, and pepper. Add potatoes, chives, basil, scallions while mixing gently. Season with salt and fresh pepper.
Steak
  1. Rub NY Strip with salt and pepper.
  2. Heat pan with light oil to over high heat. Grill for 2-3 minutes per side to cook to medium rare. Add chive butter and serve with diced red and purple potatoes.
