Instructions
  1. In a heavy-bottomed saucepan, bring cream and milk to a simmer. Remove from heat, add mint leaves, stir, cover, and let steep for an hour.
  2. In another saucepan, whisk together egg yolks and sugar until fully incorporated. Strain dairy into pot with egg yolks while pressing on the mint with the back of a spoon (or similar blunt object) to release as much mint as possible. Whisk until fully incorporated, then set over medium heat and cook, whisking frequently, until a custard forms. You can check for completion by using your finger to swipe across the mixture. If it leaves a clean line, the process is complete. Another indicator is when custard temperature reaches 170°F. Add salt to taste.
  3. Pour custard through a fine mesh strainer into an airtight container and chill in a refrigerator until temperature drops to 40°F which could take up to overnight for refrigerator.
  4. Churn ice cream using the churner's instructions. While ice cream churns, melt chocolate in a microwave or double boiler and stir to combine with oil. During final minutes of churning, slowly pour chocolate into ice cream to form thin, lacy lines, pausing to break up larger pieces. Transfer churned ice cream to an airtight container and harden in freezer for at least 4 hours before serving. Garnish with lime.
