Refreshing Summer Kiwi and Lime Mojito

Innovate on the traditional mojito this summer with kiwi, mint, lime, brown sugar, soda water, rum, and ice. Mojitos are always a staple of summer and adding kiwi to the mix brings a more tropical flavor to an already tropical cocktail. As a bartender in Florida, I’m no stranger to mojitos and I’m making this my number one drink for summer.

  • 6 whole kiwis peeled
  • 2 teaspoons brown sugar
  • 1 1/2 ounces rum
  • 2 sprigs mint large springs - the more mint the better
  • 2 cups soda water sparkling mineral water can be used for added taste

  • 1 1/2 ounces rum

Instructions
  1. Pour a splash of soda or sparkling water in a glass and muddle mint, kiwi, and brown sugar. Add rum.
  2. Add the remaining cups of soda water or sparkling water and top with ice.
  3. Garnish with kiwi wedge. If you want an added mint aroma, tuck a sprig down the side of the glass for a fragrant garnish.
